Useful in developing bakery products, cakes and biscuits without the fermentation process. Baking soda can react with heating (cooking) and with acids. Baking soda is only suitable for adding to foods that also add acid/low pH to the dough, such as butter milk, yogurt, chocolate, orange juice, or vinegar. If the cake or bread dough uses baking soda without acid, it will add a slightly bitter metallic taste, a soapy taste, and a slightly yellow color due to the production of sodium bicarbonate.
